Taste The Rainbow





Boston hit an unseasonable high of 90 degrees yesterday. With lighter clothes comes a desire to eat lighter. An array of colorful fruits and vegetables artfully displayed, creates a rainbow of choices at the market. I found the sweetest yellow tomatoes and tossed them together with extra light virgin olive oil, fresh basil, mozzarella, a sprinkling of sea salt and freshly ground pepper. Heaven. Lightly seasoned salmon, whole grain rice, roasted asparagus with lemon, and iced sparkling water with fresh blackberries made for the perfect dinner. My daughter and niece made for the perfect companions.

  2. Oh Debby! That sounds divine! Being a pasta lover, I would have to say bow tie pasta with arugula, cherry tomatoes, balsalmic vinegar and olive oil, topped with feta. Now I'm hungry!

  3. Most of our meals down here are warm weather meals...but my favorite is grilled salmon and roasted veggies! Those top two pictures could have come from any house in San Antonio...color is embraced down here! Have a great Tuesday, Debby!

  5. Thankfully it only went to 83 degrees here yesterday but like you I love to eat nothing but salads when it gets warm and doesn't heat the house up.

  6. That meal sounds wonderful Debby.....We do tend to lighten it up as it gets warmer (grilled veggies sound so good right now)....we made it to 82 derees here yesterday...it was great!!!

  8. Sounds delicious! I'm a huge fan of tomatoes and mozzarella when they're at their sweetest. And of course grilled salmon is always a fave. I wish we could have a bbq on our balcony here in Dubai.

    We do eat much lighter. It gets way too hot in Phoenix to turn on the oven.

  13. Yummy, that sounds delicious. I definitely eat lighter when the weather gets warmer, the body calls for simple salads and fruits, endless avocados and mangos in this home.

    I think spring decided to take a break in Antwerp, the weather was utterly disappointing today so the kids and I decided to eat very heartily after school. We bought baguettes and all sorts of stuff on the way home from school and now it's four minutes to five so I think I'll just go ahead and have a small glass of red ;-)

  21. Totally! That is one of my favorite things to do, to eat for the season! I am not a great cook but it is easier when you choose what is naturally ripe and appropriate for that season. Yum, your tomatoes sound great. One of my favorites is the black bean salsa that I make all summer long. It is so fun to take it to parties because it is so pretty and so healthy and so good!   23. We definitely eat lighter here in the summer... and yesterday I was in Aix-en-Provence for lunch and I had a tomato & mozzarella salad too... it was yummy :)
