For The Love Of Food: Eggplant Parmigiana

CAUTION: Dieters look away

I have been craving eggplant parmigiana with with tomato sauce baked with melted mozzarella for
a week now. Since a trip to Rome isn't in my near future, I decided it was time to give into my craving and make some.


Slice eggplant as thin as possible and rinse and pat dry with paper towels.
Dip both sides into flour mixture, egg mixture, and Panko bread crumbs.


Heat  a good quality olive oil in a saute pan until hot and then brown slices on both sides.
Repeat until all slices are golden brown. 


Drain on paper towels to absorb extra oil. 


In a baking dish layer tomato sauce, eggplant slices, fresh mozzarella, sauce and repeat until all slices have been used. Top with remaining sauce and freshly grated Parmesan cheese. I used two smaller baking dishes so I could bring some to Mom. She always brings me over a portion when she makes it too... karma is a good thing!

Place eggplant in a preheated 400 degree oven and bake for approximately 35 minutes. Cheese will be bubbly and golden. Serve with spaghetti or penne, a green salad and a fresh Baguette or Italian Bread. Put sweat pants on and allow yourself to not feel any guilt. Seriously, it's why sweatpants were invented!

I  served it with a Spinach Salad. Super easy.
Spinach greens
Crumbled goat cheese
Candied Pecans, ( I like Fresh Gourmet.. I've made them but this is easier in a jif)
Diced Pear (optional)  I didn't have any pears so I left them out
Raspberry dressing


My daughter likes to make this dipping oil for baguette slices:

Extra Virgin Olive Oil
Red Pepper Flakes
Salt + Pepper to taste
Freshly grated Parmesan Cheese

  1. OH DEAR....I DO NEED TO RUN in the other direction here! OH DEBBY, THE NORTH END IS MY FAVORITE PLACE! I used to love to go there with Ruben after a long walk from the Back Bay...we would scarf down FOCCACIA at this lovely little place where the owner would give us a FREE GLASS OF WINE!
